Basic Chicken Soup
4 or 5 sticks celery, chopped
1 onion, chopped
2 carrots, chopped
2 parsnips, chopped (1 if they're very large)
2 or 3 small potatoes, diced
Whatever chicken meat you have left
4-6 cups chicken broth, add water if needed to just cover the vegetables.
Add the celery, onion, carrots and parsnips to your chicken broth.
Bring to a simmer and cook for 25 minutes.
Add the potatoes. Cook 15 more minutes, until the potatoes and carrots are soft.
Turn off heat, and add the chicken. Stir and stand a few minutes before serving to allow the chicken to heat.
⭐ Try using the package directions on Bisquick to make dumplings. Add an extra cup of water to broth
⭐ omit potato and parsnip, Add a few slices of ginger, cut up bok choy and rice or ramen noodles, for Eastern inspired flavor.
⭐ you can use 1/2 cup of egg noodles in place of potato. Add an extra cup of water to broth.
