Basic Chicken Soup

  • 4 or 5 sticks celery, chopped

  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 parsnips, chopped (1 if they're very large)

  • 2 or 3 small potatoes, diced

  • Whatever chicken meat you have left

  • 4-6 cups chicken broth, add water if needed to just cover the vegetables.

  1. Add the celery, onion, carrots and parsnips to your chicken broth.

  2. Bring to a simmer and cook for 25 minutes.

  3. Add the potatoes. Cook 15 more minutes, until the potatoes and carrots are soft.

  4. Turn off heat, and add the chicken. Stir and stand a few minutes before serving to allow the chicken to heat.

⭐ Try using the package directions on Bisquick to make dumplings. Add an extra cup of water to broth

⭐ omit potato and parsnip, Add a few slices of ginger, cut up bok choy and rice or ramen noodles, for Eastern inspired flavor.

⭐ you can use 1/2 cup of egg noodles in place of potato. Add an extra cup of water to broth.
