Mom's Chicken "Divine"
This is based on somebody or other's Chicken Divan recipe. I have no idea where it originally came from, how it's properly pronounced, or how to cook the real thing.
Another one my mom showed me how to make when I was little.
This should make enough for a 9x9 pan.
2 cups rice, prepared per package directions
1 Head of broccoli, cut into florets. You can pre-steam them if you like them a little less crunchy. (Save the stem for soup later!)
1/2 cup chicken meat, cut into large bite size pieces
1 stick of butter, cut in half
6 tbsp flour
2 cups chicken broth
1/2 cup seasoned or plain breadcrumbs
Spread prepared rice loosely in the bottom of baking dish.
Spread chicken and broccoli pieces over rice.
Use half the butter and flour to make a roux, slowly add 2 cups of chicken broth, while whisking, to make a basic white sauce. Salt and pepper to taste.
Pour sauce over, coating as much as possible.
Melt the other half of the butter, mix well with the breadcrumbs.
Sprinkle breadcrumbs over chicken, broccoli and rice.
Bake 375 for 25-35 minutes or until top is golden.
